SWISS LACHS Zucchetti Skewers

Our recipe for SWISS LACHS Zucchetti Skewers can be optimally prepared on a grill or in a pan.

Ingredients for 8 skewers

  • 2 tablespoons olive oil
  • 1 clove of garlic, pressed
  • 2 tablespoons dill, finely chopped
  • ¾ tsp. salt
  • little pepper
  • 3 x 200 g fresh salmon filet without skin (sashimi quality)
  • 1 zucchetti, finely sliced lengthwise
  • 1 bunch onion with the green (in pieces)
  • 1 organic lemon, quartered (in slices)
  • 8 wooden skewers

Dip

  • 150 g Greek yogurt natural
  • 1 organic lemon little grated peel
  • 1 tablespoon juice
  • 1 tablespoon olive oil
  • 2 tablespoons dill, finely chopped
  • 2 pinches of salt
  • little pepper

The preparation

Skewers
Mix oil, garlic and dill in a bowl, season. Add fish cubes, zucchini slices, green onion and lemon slices, mix and stick alternately on the wooden skewers.

Dip
Mix yogurt and all ingredients up to and including pepper in a small bowl.

Grill (charcoal/gas/electric grill)
Grill the skewers with the lid closed over medium-high embers at medium heat (approx. 200 °C) for approx. 10 min. Serve the skewers with the dip.
