This recipe for a delicious Poké Bowl can be prepared perfectly with our fresh salmon specialities.
Ingredients for 2 people
Marinate the fish
- 1 tablespoon soy sauce
- 0.25 tbsp Yuzu Kosho (Japanese citrus chilli paste)
- 1 tsp sesame oil
- 1 tsp sesame seeds, roasted
- 0.5 tsp ginger, finely grated
- 200 g SWISS LACHS filet, diced
Rice
- 175 g sushi rice
- 2.5 dl water
- 1.5 tbsp rice vinegar
- 0.5 tbsp sugar
- 0.25 tsp salt
Poké Bowl
- 62 g Wakame salad
- 100 g cucumber, sliced
- 0.5 Avocado, sliced
- 0.25 Mango, diced
Marinate the fish
Mix soy sauce and all ingredients up to and including ginger.
Add the salmon, mix, cover and marinate in the fridge for at least 30 minutes. 30 min marinieren.
Rice
Rinse the rice in a sieve under cold running water until it runs clear, drain well.
Put the rice and water in a pan and leave to stand for about 15 minutes.
Bring to an open boil, reduce heat, simmer until the water has evaporated enough to form small craters in the rice. Cover and leave to soak for approx. 10 min. over very low heat, never lifting the lid.
Heat the rice vinegar, sugar and salt in a small pan, stirring until the sugar has dissolved.
Put the rice into a wide bowl, drizzle with the warm liquid, loosen with a fork, cool.
Poké Bowl
Divide the rice into bowls. Arrange the wakame salad, cucumber, avocado, mango and salmon on top.
