In this recipe, a whole juvenile salmon is cooked together with Italian oven vegetables. A quick and delicious salmon dish.
The ingredients
- 1 whole salmon weighing approx. 1.5 to 2 kg
- 2 courgettes
- 2 onions
- 20 vine tomatoes
- 2 sprigs of rosemary
- 1 organic lemon or 2 limes
- Olive oil
- A good fish spice
- Herb salt
- Pepper
The preparation
Wash the salmon (a dash of vinegar helps to remove the slimy layer) and pat dry. Slice the courgettes and onions. Drizzle an oven dish with olive oil, add the courgettes and onions and season with the herb salt and pepper. Rub the salmon with olive oil and season generously with fish seasoning. Stuff the belly with the rosemary sprigs and lemon slices. Place the salmon on top of the vegetables and arrange the vine tomatoes (on the vine) all round. Cook the salmon at 180 °C for about 1 hour. If the salmon is smaller, calculate 3 minutes cooking time per 100g. This works out at around 50 minutes for a salmon weighing approx. 1700g.
