For more than ten years, we have been raising pure Alpine salmon in the heart of the Swiss Alps, with precision and in harmony with nature. Our salmon grow in pure Alpine mountain water for nearly two years. Free from additives, antibiotics, hormones, and microplastics, they live as nature intended, swimming against a continuous current in calm, pristine conditions that mirror their life in the wild.

Open-Net Sea Farming
For decades, most farmed salmon has been raised in large mesh pens anchored in coastal waters – typically off Norway, Scotland, Chile and Canada. The fish live in nets that are open to the surrounding ocean.
This approach uses the natural marine environment, but it comes with significant trade-offs. Because the pens are open, anything in the water passes through freely – including bacteria, parasites, and pollutants. Sea lice thrive in dense fish populations and remain one of the industry's most persistent challenges. Escaped farmed salmon can interbreed with wild populations and weaken their genetic resilience. Organic waste, uneaten feed and any veterinary treatments enter the surrounding ecosystem directly.
Land-Based Recirculating Aquaculture
A recirculating aquaculture system (RAS) is, in essence, a closed loop. The fish live in indoor tanks, and the water continuously circulates through a sophisticated filtration system that removes waste, maintains oxygen, and keeps conditions stable.
At Swiss Lachs in Lostallo, this system runs high in the Swiss Alps using pure mountain water rather than seawater. Approximately 98% of the water is reused, organic waste is converted into biogas and fertiliser, and the entire operation is powered by green energy. The fish swim against a controlled current – gentle exercise that builds firm, healthy muscle, mirroring what wild salmon do in the open sea. The salinity of the water is gradually adjusted as the fish grow, from fresh water for young fry to increasing salt levels as they mature, replicating their natural life cycle from the inside out.
Because the system is sealed off from the outside world, there is no need for antibiotics, hormones or chemical treatments at any stage of production.

Melted snow feeds the cycle, where salmon grows free from chemicals, antibiotics, or contact with the sea. Our closed-loop system prevents escapees and ensures zero impact on other marine life. Because the entire process is so resource-friendly, it reduces the need for fresh water to less than 2%, making it one of the most sustainable aquaculture systems in the world.

A Carefully Guided Two-Year Journey
Six times a year, we bring in salmon eggs from Iceland. Over the next two years, they grow into fully matured salmon, reaching their ideal size of 3.5 kilograms. Throughout their life, they swim freely against a gentle current created by our four propellers, building strength and developing naturally firm flesh. Their feed, produced in France, is free from ethoxyquin and made to the highest nutritional standards, supporting healthy, balanced growth.
You Are What You Eat – And So Is the Fish
The quality of a salmon's flesh, its colour, its texture and its nutritional value all begin with what it eats. Swiss Lachs feeds its salmon with high-grade feed produced by BioMar A/S in Denmark – one of the most respected names in aquaculture nutrition.

Every batch is produced under a HACCP-based food safety system and tested for heavy metals, dioxins, dioxin-like PCBs, pesticides and other undesirable substances in line with EU regulations. Samples from every batch are stored for a full 12 months (24 months for fry feed), providing complete traceability if ever needed.
The feed is certified free from ethoxyquin and contains no added growth hormones, antibiotics or chemical growth promoters of any kind.
