Condire le fette di filetto con sale e pepe. Mescolare tutti gli ingredienti della vinaigrette e condire. Tenere in caldo nel forno a 80 gradi.<\/p>\n<p>Friggere le fette di filetto in olio d&#8217;oliva e burro, prima il lato della pelle, poi il lato della carne. Fry. Tempo totale di frittura 4 minuti. Le fette di filetto devono essere ancora glassate all&#8217;interno.<\/p>\n<p>Disporre la cicoria su un piatto e aggiungere i filetti. Versare la vinaigrette sopra.
