SWISS LACHS cucumber roll
A refreshing, light salmon treat. Perfect as an aperitif for a barbecue party in summer.
The ingredients
- 1 cucumber
- 2 tbsp Greek yogurt
- 1 tbsp cream cheese
- Lemon
- 100g smoked salmon
- ½ Avocado
- ¼ Red onion
- Chives
- Baking paper
- Sesame seeds
- Fresh dill
The preparation
- Prepare the cucumber: Peel the cucumber and cut lengthwise into thin strips using a peeler.
- Place the strips next to each other on a board, slightly overlapping, to form a “cucumber leaf”. Then carefully pat dry with kitchen paper.
- Mix the cream: Mix the cream cheese, Greek yogurt and lemon juice until smooth. Season with salt and pepper to taste. Spread the cream evenly over the prepared cucumber leaf.
- Topping: Spread the smoked salmon, thin slices of avocado and wafer-thin slices of red onion on the cream. Sprinkle with chives, dill and sesame seeds.
- Roll & serve: Roll up the cucumber strips carefully but tightly – similar to a sushi roll.
- Cut into bite-sized pieces, garnish with some sesame seeds and enjoy with your favorite sauce.
- Optional: To make the roll easier to cut, it can be placed in the freezer for approx. 20 minutes.
